South Dakota State University Extension is hosting a virtual summit focused on federal meat regulations and food safety challenges.
The event, scheduled for August 8, 2024, will feature experts from the U.S. Department of Agriculture's Food Safety and Inspection Service (FSIS).
Industry professionals can gain valuable insights into critical food safety parameters, such as cooking temperatures and ingredient handling, through a presentation by SDSU Extension Meat Science Specialist Christina Bakker.
Additionally, FSIS representatives will discuss essential topics including the Small Plant Help Desk, standard operating procedures, and thermal processing for dried and fermented foods.
“This event is an opportunity to hear from FSIS about policy and practices that may impact their daily operations,” Bakker said. “Attendees will gain insight on support that can be provided by FSIS and SDSU to help them in their operations as well as explanations of policy surrounding thermal processing.”
