NSF Funds Research to Protect Crops and Food

The National Science Foundation (NSF) has awarded a major grant to support research aimed at combating harmful microbes.

The project is led by South Dakota State University (SDSU) associate professor Nicholas Butzin and involves scientists from SDSU, South Dakota Mines, and the University of Nevada, Las Vegas.

The four-year research will focus on finding small bioactive molecules that can neutralize microbes, which can damage crops, threaten food safety, and harm human and animal health. Artificial intelligence (AI) will play a key role in speeding up the discovery of these molecules, allowing researchers to find solutions more quickly and effectively.

Microbes are tiny organisms that are everywhere in nature. Some are useful, such as those used in fermentation, but others can be dangerous.

For example, the fungus Aspergillus produces aflatoxin, a toxin that grows on corn, peanuts, and cotton, causing crop losses and risks to people and animals. A goal of the project is to find a molecule that neutralizes aflatoxin.

The research will also target harmful bacteria and biofilms, which are sticky groups of microbes that often form in food production facilities. Biofilms are difficult to clean and are a common source of foodborne illnesses like salmonella. Developing new agents to fight biofilms could help keep food safer.

Experts from the team bring a wide range of knowledge. Professor Rajesh Sani from South Dakota Mines adds expertise in biofilms and bioprocessing, while UNLV’s Boo Shan Tseng is a specialist in bacteria and microbial communities.

Together, the team will combine advanced metabolomics, AI-powered screening, and more than 600 thermophile strains to create solutions.

The NSF investment totals $5 million across the project, including $2.191 million for SDSU’s share. Beyond science, the work will also support workforce training, providing mentorship for students, professional workshops for teachers, and opportunities for young researchers.
